摘要
淮扬菜是中国最著名的菜肴风味流派之一,而扬州菜是淮扬菜的主体。认真研究扬州菜的发展过程,有助于进一步了解淮扬菜系的发展历史。
Huaiyang dish is one of the most famous dish styles in China, and in which Yangzhou dish plays a principal part. In-depth study on the developing course of Yangzhou Dish is beneficial to better understanding of the historical development of Huaiyang dish style.
