摘要 对黑豆色素提取的最佳工艺条件和稳定条件进行了研究.结果表明,黑豆色素最佳提取条件为:9%盐酸为提取液,70℃恒温,料液比1∶30,提取时间3h,提取率16.2%.该色素在一定的酸性介质、避光以及NaCl、柠檬酸、Vc和无氧化剂条件下能够稳定存在。 The optimum conditions of the black soybean's pigment and its stability were studied. The results showed that the optimum extraction parameters were as follows9% hydrochloric acid as solvent extraction, temperature is 70 ℃, the ratio of materials and extract solution is 1 : 30. The extraction time is 3 hours, the extraction rate is 16.2%. The pigment under certain conditions, such as acid medium, dark and NaCI, citric acid, vitamin C and non-oxidizing can exist stably.
