摘要
微生物是危害食品质量安全的重要因素。细菌活的非可培养状态的概念提出,对于微生物学、食品质量安全、水质管理、流行病学等方面,都有重大意义。对细菌活的非可培养的研究现状及发展趋势进行了综述。
Microorganism is an important factor that influence the safety of the food. The research of the viable but non-culturable state (VNC) of bacterial is very important for the microbiology, food safety, the management of water quality and the epidemiology. This paper introduced the concept of VNC and the biology character of the bacterial in VNC, discussed the research development of the bacterial's VNC.
