摘要 玉米淀粉合成酶活性主要来源于玉米淀粉合成酶Ⅰ(zea mays,starch synthaseⅠ,zSSⅠ)。zSSⅠ催化合成6~15dp的短链葡聚糖,并可能在淀粉合成的起始中起作用。介绍了zSSⅠ结构、生物特性、表达以及SBE对zSSⅠ生物功能的影响等。 The activity of Maize starch synthases is major due to zSS Ⅰ (zea mays starch synthase Ⅰ ). zSS Ⅰ preferentially synthesizes short chains (dp 6 - 15) in α-glucan chain elongation and maybe involved in the initiation of starch synthesis. In this paper, the structure of zSS Ⅰ, the biosynthese characteristics, the essential fragments for biofunction and the interactions with starch branching enzyme of zSS Ⅰ are introduced.
