The Application of the Gene Chip Technique in Food Safety Detection

摘要 基因芯片技术是一种多学科交叉融合产生的高新技术,该技术具有快速、准确、重复性好等特点,在食品安全检测中的运用越来越广泛。为此,对基因芯片技术及该技术在转基因食品、食品微生物、食品原料、食品营养成分检测研究中的基本原理、方法和应用、存在的问题、解决方法与发展方向进行综述。 The gene chip technique is a high and new technique which develops from muti-subject, it has been applied more and more widely for accurate detection of food safety because of its character of rapid,accuracy and repeatalle. This article was focused on the mechanism, method and application of the detection about food microbes, food transgenic ingredient, raw material of food and the ingredient of food nutrition .In addition,the existed questions,the resolved measures and the developing ways of gene chip technology in food detection were reviewed.
