摘要 利用原子吸收仪对白兰地酿造过程中矿质元素的变化进行分析研究。结果表明,白兰地酿造品种中的Ca、Cu、Fe、Mg、K、Zn及Na7种主要矿质元素在整个酿造过程呈逐步降低趋势,其成品白兰地中各元素含量受发酵、蒸馏及陈酿工艺等的影响。Zn、Cu、Fe和K4种矿质元素可作为白兰地酿造品种产地的特征指标;全部7种主要矿质元素均可以有效反映不同品种之间的差异性。Cu元素含量可用来判定配制型白兰地或陈酿白兰地的差异。优质白兰地中应含有适量的Cu(0.8~2.70mg/L);少量的Ca(0~3.0mg/L)、K(1~30mg/L)和微量的Fe(0~1mg/L)。(孙悟) The changes of mineral elements during brandy brewing were analyzed by atomic absorption spectrometry. The results indicated that the content of seven main mineral elements including Ca, Cu, Fe, Mg, K, Zn and Na decreased gradually in the whole brewing process and the content of each mineral element in product brandy was influenced by fermentation, distillation and aging techniques. Four mineral elements including Zn, Cu, Fe and K could be used as the charateristic indexes of the production place of brandy. All the seven main mineral elements could effectively reflect the diffemce among different brandy products. The content of Cu could be used to distinguish blending brandy and aged brandy. Quality brandy should contain adequate amount ofCu (0.8-2.70 mg/L), small amount of Ca (0-3.0 mg/L) and K (1 -30 mg/L), and minute amount ofFe (0- 1 mg/L).(Tran, by YUE Yang)
