摘要
白酒评酒工作是白酒生产中非常重要的环节,白酒质量的优劣主要是通过理化检验和感官品评的方法来判断,任何仪器也不能代替感官品评。通过训练,可改善和增强感官品评的能力,进而提高对白酒的品评和判断的能力。对参加白酒品评考试的考试题型、考题内容及答题要领进行了介绍。(陶然)
Liquor tasting is very important in liquor production. Liquor quality is mainly judged by physiochemical measure and sensory judgement, which could not be substi.tuted by any other instruments. Through special training, the capability of sensory judgement could be strengthened and improved for better liquor tasting and liquor quality judgement.
