浅谈纯生啤酒生产中微生物控制

摘要 纯生啤酒采用无菌酿造、无菌过滤、无菌包装,生产纯生啤酒的关键是防止和控制有害微生物的污染,即从生产的各个环节入手对微生物进行严格管理和控制,以保证啤酒的微生物安全,它包括纯种酿造、无菌过滤、无菌罐装等过程。 Draught beer is a kind of "aseptic"fresh beer, It only contains yeast, which is produced by aseptic brewage, aseptic filtration and aseptic packaging. Given without pasteurization during processing, the key point of draught beer production is purebred brewing and efficient control of microbial contamination at later stage. Thus, it is essential to ensure technology, equipment, personnel, and working environment, etc. Firstly, it is important to control the biological pollution of raw materials and equipment in the process of saccharification, gelatinization and fermentation. Secondly, the filtering system should combine diatomaceous filtering with aseptic film. Thirdly, it should ensure bright beer tank not to be contaminated by microbes and detergent. And in the filling plant, the factors concerned include bottle washing machine, bottle examining machine and filling machine, etc. Finally, staff training and control of production environment are also necessary.
