摘要
选用了改良TJA作为基础培养基,并添加3%麦芽汁、6%胡萝卜汁、1%蛋白胨水和2%土豆汁,接种嗜热链球菌和保加利亚乳杆菌各0.05%,于37℃培养10h后,每隔2h添加1次1%(v/v)pH6.86的Na2HPO4-KH2PO4缓冲剂,使活菌数提高了88%。
The appropriate growth conditions for combined strains of Streptococcus thermophilus (A) and Lactobacillus bulgaricus (B) were determined as: improved TJA as basic medium, with an addition of 3% wort, 6% carrot juice, 1% peptone solution and 2% potato juice, inoculation of A and B respectively was 0.05%, NaEHPO4 -KHEPO4 (pH=6.86) solution was spiked into the mash with a 2 h interval after 10 h fermentation at 37℃. Under the above conditions, the total amount of colony forming unit (CFU) of A and B was increased by 88%.
