摘要 自健康动物肠道分离得到乳酸菌菌株1-3,对1-3菌株的MRS发酵液、发酵滤液、中和滤液进行了抑菌试验。结果发酵液和发酵滤液的抑菌活性无显著差别,表明1-3菌株的抑菌物质为胞外代谢产物;中和滤液仍有抑菌活性,说明除乳酸外,还有其他非酸抑菌物质。发酵液经70℃、100℃、121℃处理20min后仍有抑菌活性,说明抑菌物质具有耐热性。 Bacteriostatic mechanism of the strain 1-3 of lactic acid bacteria isolated from healthy animal intestine was studied. The bacteriostatic tests were conducted with MRS fermentation liquor, fermentation filtrate and neutralized fermentation filtrate of strain 1-3. The results showed that there were no significant differences in the bacteriostatic effects between fermentation liquor and filtrate, indicating that the bacteriostatic substances of strain 1-3 were extracellular metabolite; neutralized filtrate still had the bacteriostatic effect, indicating that except for lactic acid there were other non-acid bacteriostatic substances existed. The fermentation liquor showed inhibiting activity after treated for 20 min at 70 ℃, 100 ℃ and 121 ℃, respectively, indicating that the bacteriostatic substances were heat-resistant.
