摘要 本文提出了认知实验、仿真实验、课程实验等基础实验与课程实习和课外兴趣科研等课外实践相结合的两环节多层次教学方法,并将其应用于食品工程原理实验教学。结果表明,两环节多层次教学可有效提高学生的学习兴趣,满足不同层次学生的学习要求,在实现教学目标的同时明显提高了教学质量。 The two-stage and multi-layered teaching method was proposed and had applied into experiment of food engineering principals, which contained basic experiments (cognitive experiment, imitation experiment, course experiment, etc.) and some extracurricular practice. Results indicated that the two-stage and multi-layered teaching method effectively enhanced students' studying interest and met the requirements of different students. With this method, the teaching aims were achieved and the teaching quality was also obviously improved.
