摘要
研究了复合抑制剂A、B对β-呋喃果糖苷酶(FFS)与β-果糖基转移酶(FTS)活性的影响。结果表明:复合抑制剂A在抑制β-呋喃果糖苷酶活力69.7%的同时,使β-果糖基转移酶活力提高到314.9%;复合抑制剂B则在使FFS活力降低51.5%的同时使FTS活力提高到386.9%。反应产物中有效成分低聚果糖(FOS)的含量从50%-55%提高到60%-63%,为改善低聚果糖产品质量、提高低聚果糖收率提供了可行途径。
Effect of composite inhibitor A,B on the activity of β-fructosyltransferase(FTS) and β-fructofuranosidase(FFS)from Aspergillus oryzae GX0011 was studied. The result showed that: with the A,B disposal, the comparative activity of FFS decreased by 69. 7% and 51.5%, while the comparative activity of FTS were shoot up to 314.9% and 386.9%, respectively. The content of fructooligosaccharides(FOS) in the product was raised from 50%-55% to 60%-63%. It provided a feasible way for making a large rise in the quality and yield of FOS.
