菠萝蜜果实不同组织中果胶物质的比较 被引量:5

摘要 对菠萝蜜果皮、果肉、种皮和种子中的水溶性果胶和水不溶性果胶进行比较分析。试验结果表明,菠萝蜜果实各组织中均含有丰富的果胶物质,但其存在形式及比例有明显差异。果胶物质以半乳糖醛酸计,果皮、果肉、种皮和种子中果胶物质的总固形物百分比分别为4.6%、4.1%、7.4%和10.7%,水溶性果胶与水不溶性果胶的含量比值分别为0.39、0.58、0.09和0.08。 The water-soluble pectins and the water-insoluble pectins of the tissues of jackfruit, pericarp, pulp, seed coat and seed were analyzed. The results showed that all tissues of the jackfruit contained abundant pectin substances, but there were remarkable differences in existent formation and ratio. The percentage of pectin substance (calculated as galacturonic acid) to the total solids of the pericarp, the pulp, the seed coat and the seed were 4.6%, 4.1%, 7.4% and 10.7%, and the ratios of the watersoluble pectins to the water-insoluble ones were 0.39, 0.58, 0.09 and 0.08, respectively.
