摘要
[目的]了解某部队食堂食(饮)具消毒情况。[方法]使用军事医学科学院“食品细菌检验箱”对部分食堂食(饮)具进行检测。[结果]该部队食堂食(饮)具消毒合格率为45.36%,单项指标细菌总数合格率为82.86%,大肠菌群合格率为52.14%,致病菌及HBsAg未检出。细菌总数和大肠菌群检测合格率最低的是炊事员手。[结论]该部队食堂食(饮)具消毒检测合格率仍然较低,需进一步加强消毒管理工作。
[Objective]To understand the status of tableware sterilization effect in a PLA dining hall. [Methods]Tableware were tested based on " Box for the Examination of Bacteria in Food" provided by Military Medical Academy, [Resuits]45.36% of the tableware were up to the standard. 82.86% of the tableware were up to the standard for the single item of the total amount of bacteria,52.14% were up to the standard for coli group. Pathogen and HBsAg had not been detected. Sample collected from the cooks hands was tested for the total amount of bacteria and coli group, the qualified rate was lowest. [Conclusion]The qualified rate of the tableware tested in PLA dining hall was lower, supervision and inspection should be strengthened.
