唐山市肉制品中人工合成食用色素使用情况调查 被引量:4

摘要 目的了解唐山市肉类制品中使用合成食用色素的种类和含量。方法采用GB/T5009.35—2003《食品中合成着色剂的测定》中的示波极谱法测定。结果60份样品中有53份检出合成食用色素,检出率为88.33%,检出的色素种类有苋菜红、柠檬黄、日落黄、胭脂红。被检样品中使用单一种合成食用色素的有26份,占检出试样数的49.06%。使用混合色素的27份,占检出试样数的51.94%。其中23份样品含2种色素,4份样品含3种色素。结论肉制品中超范围使用合成色素情况比较严重。 Objective To study the kinds and amounts of artificial food colors used in fresh and processed meat products in this city. Method Single sweep pnlarography was used to determine the concentration of artificial food colors in 60 samples of fresh and processed products according to GB/T 5009.35--2003. Results 53 (88.33 % ) of the 60 samples were found to have been added with various artificial food colors including amaranth, tartrazine, sun set yellow and annono. 26 (49.06%) of the 60 samples used only one kind of artificial food color and 27 (51.94%) used two or more kinds of artificial food colors. Conclusion The situation of using artificial food colors in meat products is serious in this city.
