豆类食品的新功能 被引量:4

摘要 豆类是蛋白质的良好来源,富含维生素和矿物质,膳食纤维的含量也高,饱和脂肪的含量则低。除了这些营养功用,近年来新发现豆类食品能产生一些对健康有益的保健作用。
