摘要
由于饮食习俗的原因,宰牛业是回回民族的传统行业之一。然而传统的中国是以汉族为主体的农业国家,耕牛在经济中具有重要意义。文章回顾了明清两朝回回宰牛业生存发展的社会环境,对部分官员、文人对宰牛业的态度进行了述评,分析了明清宰牛业不能禁止的原因。
Cattle Butchering became a kind of traditional industry of Hui people because of their special diet custom. But traditional china was a peasant-country with a Han Chinese majority, in wich the farm cattles played an important role in state economy. This paper recollects the social environment in which the trade of Cattle Butchering of Hui people existing and developmenting during Ming and Qing dynasty, and comments the attitudes toward this trade of officials and intellectuals of that time, analyzes the reason why this trade can not be forbidden.
