摘要 对啤酒腐败菌检测中分子检测技术应用的研究进展作一综述。内容包括聚合酶链式反应,限制性片段长度多态性,免疫学技术,核酸杂交,伏安型生物传感器。 The research advance on the detection methods of beer-spoilage microorganisms is reviewed, including polymerase chain reaction, restriction fragment length polymorphism, immunity technology, nucleic acid hybrid- ization and, voltammetric biosensor.
