饲喂沙葱和油料籽实对羊肉品质的影响 被引量:1

EFFECT OF FEEDING ALLIUM MONGOLICUM REGEL AND OILSEED ON QUALITY OF MUTTON

摘要 采用28只内蒙古羯羊,依照体重相近的原则随机分为4组,进行为期45d的饲养试验。饲养结束后,取肉样研究沙葱和油料籽实及其交互作用对羊肉pH值、失水率、熟肉率、嫩度等品质的影响,结果表明:沙葱和油料籽实及其交互作用对羊肉的失水率、熟肉率、pH值无显著影响(p>0.05);沙葱和油料籽实交互作用对羊肉的嫩度有显著影响(p<0.05)。 The feeding experiment was done with 28 Inner Mongolia wether which were randomly divided into 4 groups according to similar weight principle. At the end of feeding experiment, the motton was sampled to study the effect of the Allium mongolicum Regel, Oilseed and Allium mongolicum Regel + Oilseed on motton quality. The results indicated that : The Allium mongolicum Regel, Oilseed and Allium mongolicum Regel + Oilseed have not significant effect on lost water percent, cooking percent, pH (p 〉 0.05 ). The tenderness of the group feeding with Allium mongolicum Regel + seed is significantly higher than that of control group(p 〈0.05 ).
