摘要 对不同日龄绿头野鸭胸肌与腿肌营养成分的测定表明,野鸭肌肉中蛋白质含量高达19%—22%,脂肪含量低于7%。铜、铁、锌等微量元素含量十分丰富。说明野鸭肉具有高蛋白、低脂肪、营养价值高的特性。胸腿肌的干物质、粗脂肪及蛋白质、氨基酸含量均以80日龄组为最高。因此。 The nutrients of breast-and leg-muscles from green-head wild ducks in various ages were measured and analysed,the results showed that the protein content in wild-duck muscles was 19%-22%,fat content less than 7%,all kinds of essential amino acids were higher than that in Beijing duck,and the trace elements such as copper,iron and zinc,etc.were very rich.It was indicated that the wild-duck meat possessed the features of high protein,low fat content and high nutritional values.After having been measured,it was shown that the dry matter,crude fat,crude protein and amino acids contents of breast-and leg-muscles were the highest in the group of 80-day ducks.Therefore,it was suggested that 80-days would be the appropriate time for the ducks to be slaughtered.
