摘要
本文对安徽黄山地区出产的橡子的淀粉、蛋白质、脂肪以及水分的含量进行测定,结果表明:该地出产的橡子粉营养丰富,其中蛋白质的含量为1.98%,淀粉含量为83.24%,脂肪含量为0.88%,同时含有水分12.89%,具有较高的开发利用价值。与此同时,在传统工艺的基础上,对橡子的脱涩工艺进行了改进,并研究了几种简单的橡子产品工艺,为橡子的开发利用提供参考。
This article studied the natural nutrition composition in acorn which products in Anhui Huangshan Mountain area . The result show that the nutrition was rich, including 1,98% protein, 83.24% starch, 0, 88% fat and 12, 89% moisture, so the acorn has high value of development. At the same time, the method of removing the aringeney in acorn was improved based on the tradition processing, several simple processing of the acorn products were also studied in order to provide reference for aeorn's development and research,
