摘要
草酸是植物体内一种普遍存在的组分,许多食用植物中含有大量的草酸。草酸被认为是一种抗营养因子,长期摄入富含草酸的食物易对人体健康产生不良影响,但目前草酸的危害尚未引起人们的广泛关注。通过一定的措施可以降低膳食中的草酸含量,把其危害降低到最低程度。本文从植物体内草酸的含量、对人体健康的影响及如何调控草酸的角度入手,综述了目前国内外关于植物草酸的研究现状,并对以后相关研究方向进行了展望。
Oxalate is a common constitute in plants, and many edible plants contain large of oxalate. Oxalate is considered as an anti - nutrient, ingestion of oxalate - rich foods can be harmful to human health, but until now the hazard of oxalate was not widely concerned. In this article, the advances of oxalate content, its hazard to human health, its control manners and research directions in the future were overviewed.
