壳聚糖对猕猴桃果汁澄清效果的研究 被引量:21

摘要 用0.6gL-1壳聚糖,在pH3.5,45℃下澄清猕猴桃果汁,清汁的透光率达95%以上,且Vc等营养成分损失不大;清汁低温(4~5℃)贮藏7个月,透光率基本保持不变,且无沉淀现象。 The classification technology and processing conditions of kiwifruit juice treated with chitosan are studied in this paper.The result shows that the transmittancy of the clarified kiwi juice treated with 0.6 g·L -1 of chitosan at pH3.5 and 45 ℃ is over 95% and the nutrients including Vc,etc. are almost not destroyed.The transmittancy of the clarified juice remains consistent and there is no sediment after stored for 7 months at 4-5 ℃.
