摘要
目的在学校食堂应用HACCP管理系统,保证食品质量安全,预防食物中毒发生。方法分析学校食堂餐饮加工流程,找出存在的危害环节,制订控制措施,实施HACCP计划。结果在实施HACCP管理单位中,未再发生食物中毒。结论:在学校食堂应用HACCP管理是有效的。将HACCP原则作为执行标准是必要的。
Objective By using of HACCP in refectory, to ensure the food safety and prevent food poisoning. Method hazard points were analysed during food processing were mades, hazard points were found and measures to control it HACCP was made and then carried on. Results After applying HACCP. no food poisoning again. Conclusions Using HACCP method in refectory obtained good effect. It is necessary to made the HACCP standard for a law standard.
