甜樱桃和中国樱桃果实性状的比较 被引量:34

摘要 以甜樱桃品种大紫、长把红、红灯和养老及中国樱桃品种泰小红樱为材料,研究果实的可溶性蛋白质含量、可溶性糖含量、单果重、果柄长、纵横径,并进行口感评价。结果表明:甜樱桃不同品种之间,可溶性蛋白质含量没有显著差异,可溶性糖含量存在差异,以养老最高,达14.52%;中国樱桃可溶性蛋白质和可溶性糖含量均显著高于甜樱桃的4个品种。其中,中国樱桃可溶性蛋白质含量是甜樱桃的l.98-3.6倍,可溶性糖含量比甜樱桃高出3.6~4.7个百分点。在果实外观方面,甜樱桃中以红灯单果重最大为8.54g,果柄最短为2.58 cm,果实纵横经比最小为0.77;中国樱桃品种泰小红樱果柄长1.885 cm,显著短于甜樱桃,但单果重最小为1.35 g。口感评价表明,甜樱桃中养老甜酸适中,其他几个品种酸甜,中国樱桃最甜,明显甜于甜樱桃,与可溶性糖含量相符合。果实浸水后裂果情况表明,大紫最先裂果,裂果率最高,长把红次之,红灯最晚裂果,裂果率最低,养老和泰小红樱相近,裂果较晚,裂果率较低。 The text surveyed soluble protein, soluble sugar, fruit weight, fruit stem, lengthways length, transverse length and flavor evaluating in cherry cultivars, including sweet cherry black tatarrin, Chang bahong, Hongdeng, Eltonand Chinese cherry Tai xiao red cherry. The results showed that in the sweet cherry, the soluble protein content had no difference, but the soluble sugar had differences, the Elton had the highest augar Content as 14.52%. The soluble protein and soluble augar of chinese cherry was higher more than that of four cultivar of sweet eheey, in whiah soluble protein of Chinese cherry was 1.98 23.6 times of sweet cherry and soluble sugar of Chinese cherry was higher 3.6 - 4.7pereent more than that of sweet cherry on the appearance Hongdeng had the highest fruit weight as 8.54g,the shortest fruit stem as 2.58cm and the smallest ratio of lengthways length and transverse lensth as 0.77in sweet cherry, fruit stem of chinese cherry was 1. 885cm and was shorter than sweet cherry but had the smallest fruit weight as 1.35g. Elton was sweet and acid but others were acid and sweet in sweet cherry, Chinese Cherry was much sweet than sweet cherry which accorded with the content of sugar. After soaking in water black tatarrin cracked first and had the highest cracking rate, Chang bahong had higher cracking rate, Hongdeng cracked least and had the lower cracking rate, Elton was similar to Chinese cherry having lower cracking rate in later time.
