绵阳市售蔬菜硝酸盐、亚硝酸盐含量状况及食用卫生评价

NITRA TE AND NITRITE CONTENTS IN VEGETABLES FROM THE MARKET PLACES IN MIANYANG CITY AND THE EVALUATION OF THEM AS FOOD

在所检测的28种蔬菜中，有18种的NO^-含量超过了WHO／FAO规定的432mg／kg·FW的ADI值，超标率达65％左右，表明绵阳市售蔬菜的营养及卫生品质较差，应当引起有关部门的高度重视并设法加以改善。此外，还探讨了蔬菜的不同品种、不同部位及不同采收时间与硝酸盐含量的关系。

An investigation on twenty - eight species of from 1991 to 1993demonstrated than vegetables containing nitrate above 432ppm (ADI)madeup 65% of the investigated, which implied that vegetables in Mianyang werepolluted with nitrate severely, nutritional quality and hygienic quality shouldbe imperatively improved.
