摘要
利用正交试验确定麦胚蛋白提取的最佳工艺条件。其工艺条件为:控制加水量15倍(原料量)、pH9.5、温度50℃进行第1次碱提(时间60min),离心;将离心所得沉淀物用5倍(原料量)温度为50℃的水进行第2次碱提,离心;将2次碱提的上清液调pH值到pH4.0(麦胚蛋白的等电点),离心,将沉淀物低温干燥即得产品。
The orthogonal experiment was carried outd to analyse the technology condition of WGP extraction. The results indicated that the best extraction conditions were: the first alkali solution was conducted by controlling the water quatity ( 15 times of that of raw material), pH 9.5, temperature 50 ℃, which would go on 60 nlin. And then hy centrifugation we can get some sediment which was alkali suluted another time. This time the quafity and temperature of water were seperately 5 times of that of raw material, 50 ℃. The supematant liquid obtained by alkali solution was centrifuged under pH4.0( the isoeletric point of WGP).
