摘要 食品安全问题具有广泛社会关注度,已成为全球性重大战略性问题。多环芳烃(PAH)是人们熟知的持久性有机污染物(POP)之一,由于多种原因,从油籽中提取油脂不可避免地受到其污染,作为一种致癌物,它们毫无疑问有着潜在健康危害。鉴于PAH亲油性,可在油脂精炼某些阶段,尤其是白土脱色过程中得到有效清除。 Food safety have been given extensively concern and become one of the new developments in edible oils refining. PAH (polycyclic aromatic hydrocarbons) are known as one of the persistent organic pollutants (POP) and are of concern for their toxicity and their persistence in the environment. As a carcinogen, PAH undoubtedly have potential health hazard. Due to the lipophilicity, PAH could be removed in some oil refining steps especially in the orocess of bleaching by activated carbon.
