摘要
添加具有营养保健作用的海藻提取物结合豆奶生产技术进行研究;对影响豆奶生产的主要技术条件通过正交设计试验。结果表明添加乳化稳定剂、豆水比(1∶11)、热水磨浆及添加5%海带浸提液为最佳豆乳生产工艺,由此可生产各种风味的经济豆奶。
A producing technics was investigated by adding nutritive kelp extract in combination with soybean milk.An orthogonal experiment was made by the main key factors affecting the soybean milk quality.The result confirmed that the best conditions as follows:the ratio of soybean with water was 1∶11,adding the emulsifying agent and 5% kelp extraction,grinding the soybeans with hot water It was available for the manufacture of different kinds of flavoured soybean milk.
