摘要
酪蛋白巨肽(Caseinmacropeptide,简称CMP)是凝乳酶作用于酪蛋白(主要为κ酪蛋白)后形成的一种多相肽。它具有独特的氨基酸组成及功能特性,故可用于生产保健食品。CMP或其胰蛋白酶水解物因具有生物学活性已用作制药原料。酪蛋白酸盐、凝乳酶处理过的酪蛋白或凝乳酶上清液均通过离子交换层析或超滤作为批量生产CMP的原料。
Casein macropeptide is a heterogeneous peptide derived from the product which formed by rennet on casein, espacially on κcasein The unique amino acid compositions and functional properties of the CMP suggest that it can be added in some health food. The CMP or its tryptic digest has been used as a material of medicine. Chymosintreated casein, caseinates or rennet whey may be used as starting material for largescale preparation of CMP with ion exchange chromatography and ultrafitration
