摘要
目的:对铬天青S分光光度法测定食品中铝含量时样品的无机化处理方法进行探讨,并用新建立的方法对广州市内的几类食品进行调查分析。方法:对广州市内的几类食品进行采样,分别用干灰化法和国家标准方法处理样品,测定铝含量。结果:干灰化法RSD值为1.3%~4.1%,回收率为90%~96%,改进后方法与国家标准方法测定结果无显著性差异。检测7类食品,111件样品,其中油条全部不合格,馒头、膨化食品、蛋糕的合格率分别为20.8%、83.3%、85.7%。结论:食品样品经干灰化法处理后,用铬天青S比色法测定,结果准确,精密度好,操作比湿消化法简便快速;广州市油条、馒头等食品含铝量超标严重,需要引起有关部门注意。
Objective:To study the pretreatment of sample of determination of aluminium in food and analyze several kinds of food in Guangzhou with the improved method. Methods:The food samples in Guangzhou were collected. The samples were pretreated by dry ashing and wet digestion of the method of the national standard of china. And the content of aluminium in these samples was determined. Results:The RSD of dry ashing was 1.3% -4. 1%, the recovery was 90% -96%. There was no significant difference between the results obtained by two methods. A total of 111 food samples from 7 kinds of food were determined. Oil - strip was completely unqualified. The qualified rates of steamed bread, puffing food and cake were 20. 8% ,83. 3% and 85.7% respectively. Conclusion :The dry ashing method is convenient, rapid, accurate and reliable in the determination of aluminium with CAS. The aluminum content of some kinds of food such as oil - strip and steamed bread in Guangzhou exceeds the allowed limit seriously. The concerned department should pay attention to it.
