植物来源穿山龙皂苷酶的分离提纯及其酶性质 被引量:3

摘要 对从麦麸中提取的穿山龙薯蓣皂苷酶进行分离提纯并对其酶性质进行鉴定.结果表明,该酶的分子质量约为65 ku;该酶不仅能水解穿山龙薯蓣皂苷的α-鼠李糖基,也能水解人参皂苷Rc的20-O-α-阿拉伯糖基和3-O-β-葡萄糖基,酶反应的最佳温度为40℃,最适pH值为5. Dioscin-glycosidase was purified from wheat bran and characterized, the molecular weight of which was 65 ku. The enzyme could hydrolyze both α-rhamnoside of the dioscin and 20-O-α-arabinoside and 3-O-β-glycoside of the ginsenoside Rc. The optimum temperature and pH for enzyme activity was 40 ℃ and pH 5 respectively.
