摘要
中国烹饪历来被认为是比较复杂的烹饪体系,一直以来都是以手工方式进行生产,因此在菜肴的生产制作上存在很大的经验性和模糊性,受外界干扰的因素也较多。中国菜肴自动烹饪机器人(Automatic Integrated Cooker,简称AIC)的诞生有效地改变了这一现状,为中国烹饪标准化体系的建立,提升中国烹饪的科学内涵,提高烹饪的学科地位奠定了基础。
Chinese cuisine has long been considered a system with great complexity. Since it mainly involves manual skill in operation, there exist obscurity, experience dependence and some other external interferences. With the birth of AIC (Automatic Integrated Cooker), current situation has changed greatly and effectively, which lays a solid foundation for the standardization system establishment of Chinese cuisine, for the promotion of science connotation and for higher position of cuisine as a subject.
