摘要
目的探讨罗非鱼片加工下脚料提取液化蛋白的工艺,为有效利用罗非鱼片加工下脚料中的蛋白质提供科学依据。方法使用不同的蛋白酶和不同的工艺对罗非鱼片下脚料的蛋白质进行水解,通过测定其水解率进行优选。结果采用复合酶,在温度50℃,pH7,酶解6h,水解得率最高。结论复合酶法用于罗非鱼下脚料制取液化蛋白,生产工艺简单、周期短。并显示液化蛋白质营养丰富,含有大量鲜氨基酸,具有良好的开发价值和广阔的市场前景。
Objective To optimize the technology in extracting liquefied protein from the offal of Tilapia. Methods The offal protein was hydrolyzed with different enzymes under different conditions, with the hydrolysis rate as index, Results Hydrolysis rate was the highest with the complex enzyme under 50℃ at pH7 for 6h, Conclusion The technology in extraction of liquefied protein from the offal of Tilapia with complex enzyme is simple and fast. The extracted protein product contains large quantity of amino acid and there is a bright prospect for explotation and maketing.
