摘要
对影响酸乳EPS提取的乙醇体积分数、提取时间、乙醇与溶液体积比三因素,运用Box-Behnken设计进行优化,确定主要因素的最佳条件。优化的结果为:在乙醇体积分数为82%,提取时间7.5h,酒精与溶液体积比1.1︰1时酸乳EPS提取吸光度最大,达到0.182。
Through Box-Behnken design and response surface anslysis ,this papers researchs the main factors of impacting on the extraction of EPS in yoghurt and determines the most appropriate conditions .The result indicates that on the condition of 82% concertation of ethanol, 7,8 h of extractio,the 1 : 1 volume ratio of ethanol and solution,the OD value of extracted EPS in yoghurt is max ,up to 0.182.
