摘要
分析了鸢乌贼各部分的基本成分以及Pb和Cd的含量。主要研究了印度洋鸢乌贼肌肉蛋白质在不同温度下随时间变化的情况,结果表明:肌球蛋白重链(MHC)在4、20℃时缓慢降解;30℃时降解速度加快,温浴5h后,完全降解;40℃时降解最为严重,4h后完全降解,有66kDa蛋白质生成,副肌球蛋白降解趋势也增强;50℃时降解不明显,温浴80min后MHC仍然存在。可推断:鸢乌贼肌肉蛋白质中可能含有降解MHC的蛋白酶,这些蛋白酶40℃时有较高的活性。
Study the proximate composition and the content of Pb and Cd in some parts of Ryukyu squid. The changes of Ryukyu squid (Symplectoteuthis oualaniensis) actomyosin in different temperatures were studied by SDS-PAGE. The results were that the degradation was inconspicuous above 4℃ and 20℃. The degradation was markedly reduced above 30℃, and completely disappeared after 5 hours incubation. The degradation was most markedly reduced above 40℃ .There was a new protein row at 66 kDa, and the degradation of PM was remarkably reduced. The conclusion was gained that proteinase inducing the degradation was existed, and it was high activity at 40℃.
