肌肽对肉鸡生长性能及胸肌肉品质的影响 被引量:6

Effects of Carnosine on Growth Performance of Broilers and Quality of their Chest Muscle

摘要 在1~4组肉鸡饮水中肌肽的添加量分别为0、20、40和60mg/L,每周测定各组内仔鸡的周增重、料重比,并在试验结束时胸肌采样,测定胸肌肉品质指标,观察肌肽对肉鸡生长性能和胸肌肉品质的影响。结果表明:试验的前两周,肌肽大剂量组的周增重显著高于对照组(P〈0.05);4~6周龄,各剂量组的周增重均高于对照组,但差异不显著(P〉0.05);添加肌肽能明显改善饲料转化率,提高了胸肌水分含量及pH值;降低了失水率、肌纤维的直径;胸肌粗蛋白及粗脂肪的含量略微下降;中、大剂量组的胸肌色较淡而亮度增加。 400 one-day old AA broilers were selected and divided into four groups randomly, and 0, 20, 40 and 60 mg/L of earnosine were added into the drinking water separately. On each weekend, the weight gain and the feed-weight ratio were measured weekly. By the end of experiment, the chest muscle was sampled to determine the meat quality and to observe the effects of carnosine on growth performance and chest muscle quality of broilers. The results indicated that the weekly weight gain in the group of large-dose earnosine was higher than that in the control group significantly ( P 〈 0.05 ) during the first two weeks ; the weekly weight gains in the groups of carnosine with all doses were higher than that in the control group during 4 - 6 week, but the differences were not significant (P 〉 0.05 ). Carnosine could improve feed conversion rate significantly, and increased the water content and pH value in chest muscle, decreased the chest muscle dehydration rate and muscle fiber diameter, but the contents of crude protein and crude fat in the chest muscle were reduced slightly. The chest muscle had relatively light color but its brightness increased at the groups of carnosine with moderate and high dose.
