STUDY ON THE QUALITY PROPERTIES OF GOOD QUALITY WHEAT VARIETIES IN GUANZHONG SHAANXI

摘要 陕西关中属黄淮冬麦区,是陕西省冬小麦的主产区,也是黄淮冬麦区的主要育种基地之一。这里培育的优质冬小麦品种,对整个黄淮麦区,乃至其它麦区的小麦育种、品种更新、粮食加工工业的发展,都曾产生过较大的影响。试验研究了陕西关中地区主要优质小麦品种的品质特点,结果认为:优质小麦品种一般表现为容重显著较高,籽粒较硬.沉淀值明显高于一般品种,蛋白质和湿面筋含量较高;从面团的流变学特性来看,面团的软化度很低,面粉质量值高,面团稳定时间较长,拉伸能量和最大拉伸阻力较高,面包的烘烤品质突出。但在食品用途上品种间还存在一定的差异。 The plain of the Weihe River in Guanzhong which belongs to winter wheat area ofthe Yellow and the Huaihe Rivers is the main winter wheat productive region in Shaanxiprovince,and also the important breeding base of the Yellow and the Huaihe River'sarea-.The good quality wheat varieties breaded here have large effect on the wheat breeding, variety renewal and cereal processing in this area and another areas.This paperstudied on the quality properties of main good quality wheat varieties comparing with allvarieties from this region.The result is that test weight,sedimentation value,grain hardness,protein and wet gluten content of good quality varieties are higher than that of theaverage of all varieties. The rheological characters of dough have lower softening,longerstability time, higher valorimeter in addition to energy and maximum resistance.Thebaking quality is outstanding.This give the fact that there are differences in the range ofgood usage for good quality varieties.
