摘要
为改进绿芦笋低温贮运保鲜技术,将采后绿芦笋用CO2和果蔬液体保鲜剂处理,并在(0~0.5)℃冷库中贮藏,测定其品质指标变化。试验结果表明,MAP(15%CO2和20%O2)+保鲜剂和MAP处理的绿芦笋出现的呼吸高峰比对照推迟10天;同时MAP+保鲜剂处理对VC、叶绿素、可溶性蛋白含量的下降、丙二醛浓度积累以及纤维素含量的上升均具有较好的抑制作用。在贮藏45天时,MAP+保鲜剂处理组的商品率仍高达92%,与MAP和对照组相比分别高4%和14%。
The green asparagus was treated with CO2 and liquid freshment medicament of fruit and vegetable at the low temperature to improve the technology of storage. The indexes of quality were measured. The results showed that the combination of liquid freshment medicament with MAP could postpone the climacteric by 10 days at the same time, it could also reduce the loss of vitamin C, chlorophyll and soluble protein, lessen the accumulation of malondialdehyde and fibre. The commodity rate of green asparagus treated by the combination of liquid freshment medicament with MAP was 92% after 45 days at the low temperature(0-0.5 )℃.
