白酒标准化的发展推动了全国白酒行业的生产技术进步。对3个新近颁布的新国标与原标准进行比较:新国标对英文名称做了修订;酒精度规定高度酒为41%vol~68%vol,低度酒为25%vol~40%vol;酒精度的表示由原标准的“%(v/v)”改为“%vol”;总酸只规定了下限,总酯下限作了适当调整;高度酒酒度上限由59.0%vol调整为68%vol,低度酒下限由35.0%vol调整为25%vol,原标准低度酒上限为39.0%vol,现调整为40%vol;质量等级只分优级和一级;一个香型只有一个标准。
The development of liquor standardization has driven the technical advancement of liquor-making industry. The recent issued three new national liquor standards were compared with original ones as follows: original English names revised; the definition of high-alcohol liquor and low-alcohol liquor as 41%vol~68 %vol and 25 %vol~40 %vol respectively; the symbol of alcohol content revised from original %(v/v) to %v/v; lower limit defined for total acids and some adjustment of lower limit for total esters; the upper limit of high-alcohol liquor increased from 59 %vol to 68 %vol and the lower limit of low-alcohol liquor adjusted from 35 %vol to 25 %vol, and the upper limit of low-alcohol liquor adjusted from 39 %vol to 40 %vol; quality grades classified into excellent grade and grade one; and only one standard for each liquor flavor type.
