摘要
以乙醇作为厌氧呼吸的指标,评估气调包装贮藏茶树菇时厌氧呼吸产生的条件,探讨硅窗对茶树菇的呼吸特性与贮藏品质变化的影响。结果表明:与普通气调相比较,硅窗气调能明显改善茶树菇贮藏的气体环境。贮藏温度为3℃,硅窗面积0.9cm2以上和贮藏温度为7℃,硅窗面积1.2cm2以上,都能避免厌氧呼吸的发生,茶树菇有更好的贮藏品质。
This paper took ethanol as a indicator to evaluate the conditions of anaerobic respiration occurring during Agrocybe chaxingu stored with modified atmosphere packaging and evaluate the effect of silicon gum film as windows for gas exchanging to the respiration and quality change of the stored Agrocybe chaxingu. The results showed that anaerobic respiration occurred when the 02 concentration was below 1%, and the silicon gum film window can increase the 02 concentration obviously. The anaerobic respiration did not occur when the sizes of the silicon gum film windows were 0.9 cm2 at 3 ℃ and 1.2 cm^2 at 7 ℃ to store Agrocybe chaxingu. Compare to the Agrocybe chaxingu stored without silicon gum film window, the Agrocybe chaxingu stored with silicon gum film window has better quality : higher Ascorbic acid content, lower cell membrane permeability and extending the shelf life more than 8 days.
