摘要
以新采摘的香椿为材料,以食盐、锌、铜盐为护绿剂,分别选择3℃、-6℃和-18℃对其进行贮藏。实验结果表明,经过0.05%Na2CO3溶液热烫后,再添加5%的食盐和0.05%CaCl2混合溶液,在-18℃进行存放,经过长达半年的贮藏,仍能保持良好的鲜绿色。
Fresh Toona Sinensis was stored in 3℃, -6℃, -18℃ respectively with presence of biophyll protect agent of NaCI, CuSO4, Zn（CH3OO）2 mixed solution in the experiment. The results showed that Toona Sinensis samples which was added with 5% NaCl and 0.05% CaCl2 preserved for more than half year under the condition -18℃ could still maintain satisfied greenness.
