摘要
该文从花生蛋白组成、功能特性、提取方法及开发利用等方面对花生蛋白国内外研究最新进展进行综述,并提出花生蛋白提取方法改进和功能性质改善将成为今后研究重点。
The latest research advances at home and abroad was reviewed from the aspects of the compo-sition, functional properties,extracting method and explotation of peanut protein. It was pointed out that improvement-of-extracting method and modification of functional properties of peanut protein would be emphatically reseaches.
