摘要
跟踪监测了世界最大天然贮酒库—四川古蔺郎酒厂的天宝洞和地宝洞在不同季节和空间位置的洞壁微生物。结果表明:洞壁及酒坛表面酒苔中各类微生物总的数量变化趋势是霉菌类、细菌类含量分别占总数的75%和20%以上,细菌中的非芽孢菌类约占细菌总数的99%以上,霉菌类中又以青霉类占绝对优势;秋冬季微生物数量较高,夏季数量较低;两洞细菌总数接近,其它菌类以天宝洞略高;洞内酒坛表面酒苔的霉菌类数量约为洞壁的5~7倍,洞壁细菌约为酒坛的15~17倍。酒坛和洞壁表面形成的厚厚的一层酒苔,主要是由以青霉菌类和部分非芽孢细菌类组成。酒苔的形成与洞内长期贮酒密切相关。
Microbes in Wall of Tian-Di Bao Cavity Storing with liquor which is the greatest natural liquor storeroom in the word was studyed. The results indicated that the proportion of mildew and bacterium in the surfaces of Cavity wall and ceramic-contianer Loading with liquor are more than 75% and 20% separately, the proportion of non-sporangium bacterium are more than 99%. Among the mildew, the number of penicillium are dominant absolutely. The amount of microbes in the autumn and winter is more than that in summer. The amount of bacteri um in the two cavitys is equal approximately, but the other microbes in the Tian-bao cavity is more appreciably than that in Di-bao cavity. The amount of mildew in the surfaces ofceramic-contianer loading with liquor is about 5-Ttimes as great as in the Cavity wall but the bactreium in the Cavity wall is about 15-17 times as great as in the serface of the ceramic-contianer. The thick Jiu-Tai is made up of penicillium and non-sporangium bacterium, the growth of the JiuTai relate nearly to storing liquor chronically.
