摘要 研究了人乳和牛乳组分对双歧杆菌生长的影响。结果表明,不同来源的双歧杆菌对生长因子Ⅰ、Ⅱ的需求具有不同特点。婴儿肠道来源的双歧杆菌对人乳中的糖大肽较敏感,但人乳并非均是所有的双歧杆菌株理想的生长促进物质。人乳中生长促进物质主要存在于糖大肽中。糖大肽的量与其对人乳敏感菌株的生长促进作用间具有剂量效应关系。人乳糖大肽活性约为牛乳糖大肽的3倍。牛乳酪蛋白组分对双歧杆菌的生长作用主要存在于para-κ-酪蛋白中。该分子中可能存在能与双歧杆菌细胞表面受体结合,具有特定结构的肽片段,该肽片段中含有半胱氨基酸残基。 The effect of human milk and bovine milk components on the growth of Bifidobacteria was studied in the paper, it was found that different orignal Bifidobacteria responsed differently to bifidus factor Ⅰ and Ⅱ. Human milk was not proved to be the exceptionally potent growth promoters for all bifidobuteria strains. Most infant original bifidobacterial species responsed well to the glycomacropeptide (GMP) of human milk, it behaved in a dose-dependent manner, the average Bifidobacteria growth promoting activity (BGPA) of human milk GMP was found to be about 3 times over that of bovine GMP. Most of the BGPA activity of bovine casein resided in the para-κ-casein fraction. It was suggested that there might be some polypeptide portions in the molecular of para-κ-casein which could bind to the growth-promoter-receptors on the surface of Bifidobacteria cell, there was a cysteine residure in the peptide chain.
