食品中多酚类化合物测定方法研究进展

The advances in analytic methods of food polyphenols

食品中的多酚类化合物主要来自于植物源性食品,人们在研究和开发各种食品时就不可避免的要对食品中的多酚类化合物进行分析与测定。目前应用于食品多酚类化合物的测定方法主要有高锰酸钾滴定法、光谱分析测定法、色谱分析测定法等,是对食品中多酚类化合物分析的必要手段之一。主要对这几种测定方法进行简介和比较,为以后食品中的多酚类化合物研究提供参考。

The polyphenols of food mainly comes from botanical food. People inevitably analyze and measure polyphenols in research and development of various food. At present we have lots of detecting methods to measure the food polyphenol, such as potassium permanganate titration, spectral analysis, chromatogram analysis, which are the main analysis method in this field. This paper introduces and compare of those detection method, all of this will help some body study on food polyphenols.
