灵芝发酵玉米皮渣获取膳食纤维工艺研究 被引量:4

摘要 以蒸煮后的玉米皮渣为原料,对药用真菌灵芝固态发酵获取膳食纤维的工艺进行了研究。研究表明,接种量、种龄、氮源、无机离子均能改善产物中膳食纤维的组成。将种龄控制在对数生长期前期,添加KH_2PO_4和MgSO_4会提高产物中膳食纤维各组分的含量。固态发酵优化工艺条件:(NH_4)_2SO_4 0.5%,KH_2PO_4 0.5%,MgSO_4 0.25%,种龄4 d,培养时间15 d。此条件上发酵终产物总膳食纤维含量达92.4%,其中水溶性膳食纤维含量达到14.13%。 The fermentation technology of producing dietary fiber by Ganoderma lucidum fermented on corn skin braised was investigated. The results show that the composition of dietary fiber can be influenced by inoculation amount, nitrogen sources, inorganic ions and inoculation age. The content of composition in dietary fiber is increased by adding strains in the age of pro-logarithm growth or adding KH2PO4 and MgSO4. The optimal fermentatioin conditions were: inoculation age 4 d, (NH4)2804 0.5%, KH2PO4 0.5% and MgSO4 0.25%, 15 d incubation. Under the optimal condition, the total dietary fiber in the fermentation production could reach 92.4%, and the soluble dietary fiber was up to 14. 13%.
