屠宰过程中禽类脱毛技术的研究 被引量:3

摘要 针对禽类屠宰加工中机器脱毛后颈部、腿部、翅膀等部位的小毛及部分硬毛难以去除这一问题,从生产成本、温度要求、脱毛率、使用方便性、安全性等因素对几种食品级粘合剂进行了筛选。结果表明,食品级松香甘油酯、食品级石蜡、动物油脂比例为65∶25∶10时,不仅可以达到最好的脱毛效果,同时又保证了禽类组织比较嫩的情况下不会被烫熟,同时它也达到了工业化生产的成本低、使用方便、安全无毒等特点。 In order to depilate the fuzz on cervixes, legs and wings of the poultry after depilating by machines during the slaughtering process, several depilatories permitted using in food industry were used in the study. And the influncing factors such as product costs, temperature demand, depilating effect, convenient usage and security were considered during the selection. The results indicated that in the ratio of 65:25 : 10 (food - grade rosin glyceride: food paraffin: animal oil ), the optimum depilateing effect could be obtained, while the tender tissue of the poultry could avoid scalded. This method is suit for industrialization because of its characteristics of low cost, convenience and safety in the usage.
