摘要
双孢菇采后的生命活动是在呼吸作用、蒸腾作用等基本代谢的基础上,表现出的成熟与衰老的生理变化过程。重点论述了碳水化合物、氮素物质、脂类等代谢、酚类物质的代谢与褐变的关系,对双孢蘑菇贮藏保鲜影响最大的酶是酪氨酸酶和蛋白酶。
The Agaricus bisporus' life after harvest is a proccess of becoming mature and aged based on the basic metablic functions such as respiration, evaporation within the cells. This paper focuses on the metablism of carbohydrates, nitrogen, lipids, and the relationship between phenolics and enzymatic browning, and summarizes that tyrosinase and protecses have the greatest effect on fresh-keeping of Agaricus bisporus.
