The Agaricus bisporus＇ life after harvest is a proccess of becoming mature and aged based on the basic metablic functions such as respiration, evaporation within the cells. This paper focuses on the metablism of carbohydrates, nitrogen, lipids, and the relationship between phenolics and enzymatic browning, and summarizes that tyrosinase and protecses have the greatest effect on fresh-keeping of Agaricus bisporus.
