摘要
为探讨四川风鸭产品中微生物区系的构成,采用传统微生物分类鉴定法,对风鸭中的可培养微生物进行了分类统计,并对其中18株球菌菌株初步分类鉴定到属。结果表明,风鸭各部位微生物菌落总数为4.692×103cfu/g;细菌类的18株球菌菌株分别属于奈瑟氏球菌属(Neisseria)、微球菌属(Micrococcus)和葡萄球菌属(Staphylococcus)3个属。其中,奈瑟氏球菌属和微球菌属的菌落比例之和占总菌落数的50%以上,葡萄球菌属的菌落比例仅占3%。
In order to know the compositions of microbial community in the air-dried duck products, and then lay foundations for making clear the close connections between microbial categories, amount and their functional mechanism, traditional microbial classification and identification methods were carried out to analyze the culturable microorganism in the air-dried duck samples. Moreover, the 18 bacterial strains which were coccus by microscope were identified to genus. The results of identification showed that the total amount of microbial colonies reached to 4.692×10^3cfu/g. And the 18 coccoid strains belonged to genera Neisseria, Micrococcus and Staphylococcus, respectively. Half of the 18 strains isolated from the air-dried duck were genera Neisseria and Micrococcus. The genus Staphylococcus with a proportion of 3% was also detected in the colonies.
